Spicy sausage and butter bean casserole

  • Chop the sausages into thirds and fry in about a third of the oil on a relatively high heat until brown all over. Set aside. Fry the onion and garlic in the rest of the oil for around 5 minutes, or until soft, and then add the red pepper and cook on a low heat for another 2-3 minutes. Add the chilli flakes and paprika and mix until all the veg are coated, and then add the tinned tomatoes, red wine and the browned sausages. Simmer for around 15-20 minutes until the sauce is nice and thick. Add the butter beans and mushrooms and simmer for another 5-10 minutes. Then stir in the parsley and serve.
