Ingredients
2 medium Red Pepper | |

1 medium Green Pepper, sliced | |
2 medium Yellow Pepper, sliced | |
2 medium Courgette, sliced in quarters | |
3 medium Onion, All Types, Red onion finely sliced | |
1 sachet(s) Discovery Foods Mild Fajita Seasoning Mix | |
4 individual Weight Watchers Tortillas (Wraps) | |
100 g Cathedral City Mature Lighter Cheese | |
1 jar(s) (large) Passata |
Instructions
- 1. Spray wok or deep frying pan with spray oil. 2. Add onions and fry until soft, using 2 wooden spoons to toss constantly. 3. Add peppers and cook further until soft, stir as above.. 4. Add cougette, stir as above 5. When mixture starting to brown, add seasoning and 5 fl oz cold water and mix thoroughly, simmer for 2 mins. 6. Spray an oven proof dish with spray oil 7. Remove pepper mix from heat, spoon a 1/4 of the pepper mixture into the centre of the wrap, fold and carefully place upside down in the dish - do the same for the remaining 3 wraps. 8. Pour over enought passata to cover. 9.Sprinkle with grated cheese. 10. Cook in preheated oven gas mark 7/200 c for approximately 20 minutes or until starting to brown. 11. Remove from oven and leave to stand for 2 minutes before serving with a green salad with stredded cabbage for added texture.
